Norland recently participated in the Student Community Partnership Sustainable Christmas event alongside the University of Bath, Bath Spa University and their respective Students’ Unions to promote eco-friendly festive activities.

Organised by the Student Community Partnership (SCP) – a joint commitment between Bath’s higher education sector and Bath & North East Somerset (B&NES) Council that promotes relationships between students and residents of Bath – the event featured interactive stalls and practical demonstrations designed to help attendees reduce waste and embrace sustainable festive traditions.

Held on 26 November, the event invited students from Norland, Bath Spa and the University of Bath to learn about sustainable cooking at Christmas, reduce and reuse leftovers, and take part in relaxing Christmas craft activities.

Norland contributed through two key initiatives:

Reducing food waste: Penny Bullion-Peters, Food and Nutrition Lecturer, shared innovative recipes for transforming Christmas leftovers into delicious dishes. Her creations – including zero-waste stock pots, cheese board rind croquettes and Christmas pudding truffles – aim to minimise landfill waste and reduce the carbon footprint of festive cooking.

Eco-friendly gift wrapping: Kate Jaeger, Senior Sewing Lecturer, demonstrated how to make reusable beeswax wraps and fabric gift coverings, offering sustainable alternative to single-use wrapping paper and plastic.

Penny Bullion-Peters commented, “We are delighted to be able to take part in the SCP’s Sustainable Christmas event. Root to stem cooking, responsible food sourcing and reducing food waste perfectly aligns with Norland’s Food and Nutrition curriculum where these principles are integrated into child and family-friendly meal planning and preparation. We are excited to bring this initiative, and our expertise, to the SCP event.”

Ghika Savva, manager at SCP said: “Sustainability and partnership are core strategic drivers for the SCP and at the heart of what we do. Our Norland colleagues put so much thought and planning into this event and their expertise in nutrition and creative approach to sustainability transformed this evening for all the students who attended.”

The event, which was held at the Scala building in Bath, also included a cooking demonstration from the University of Bath Vegetarian Society (Veg Soc) and a representative from B&NES discussing food waste and recycling programmes in the area.

The Sustainable Christmas event follows the success of previous sustainability initiatives from the SCP and reflects Norland’s commitment to sustainable practice in both our curriculum and community. Norland’s green team promotes sustainable initiatives for staff and students including Sustainable Fashion Week.
